En Peking and er normalt slagtet ved at sk\u00e6re op under begge vinger og udtage organer gennem disse huller. Ved at sk\u00e6re en tr\u00e6prop stoppes gumpen til og anden kan fyldes med v\u00e6ske under stegning, for at opn\u00e5 en meget saftig steg. Det kan man ikke med en dansk industri and s\u00e5 der blev indsat en \u00e5bnet colad\u00e5se.<\/p>\n\n<figure class=\"wp-block-image\"><img loading=\"lazy\" decoding=\"async\" width=\"1024\" height=\"576\" class=\"wp-image-481\" src=\"http:\/\/hansenbryg.dk\/wp-content\/uploads\/2019\/04\/20190409_200621-1024x576.jpg\" alt=\"\" \/><\/figure>\n\n<p>Gumpen blev nu sn\u00f8rret bedst muligt til og anden lagt i t\u00f8rmodnings k\u00f8leskabet ved 4 Celsius i 5 d\u00f8gn.<\/p>\n\n<figure class=\"wp-block-image\"><img loading=\"lazy\" decoding=\"async\" width=\"1024\" height=\"576\" class=\"wp-image-482\" src=\"http:\/\/hansenbryg.dk\/wp-content\/uploads\/2019\/04\/20190409_201531-1024x576.jpg\" alt=\"\" \/><\/figure>\n\n<p>Undervejs blev anden overh\u00e6ldt tre gange med en blanding af riseddike, honning, sukker og vand for at f\u00e5 et flot brunt skind.<\/p>\n\n<p>I ventetiden blev der bygget et vertikalt rotisseri som kunne monteres p\u00e5 skorstens hullet p\u00e5 min stenovn. En traditionel Peking and er stegt i store br\u00e6ndefyrrede ovne ved lav temperatur.
