N\u00e5r b\u00f8nnerne er f\u00e6rdigkogt h\u00e6ldes vandet fra mens det stadig er helt varmt hvorved en del rest fugt damper af. Det er vigtigt at b\u00f8nnerne hverken er for v\u00e5de eller t\u00f8rre for den efterf\u00f8lgende svampe v\u00e6kst. Mens soja b\u00f8nner koger skal hvedekerner ristes. Ligesom b\u00f8nnerne er det en smagssag hvor h\u00e5rd ristning man \u00f8nsker og der findes beskrivelse af ret m\u00f8rkristede korn. I mit fors\u00f8g valgte jeg en medium ristning til en gylden farve. Form\u00e5let er smags indput men ogs\u00e5 at undertrykke eventuelle svampespore i kornet.<\/p><p>Den ristede hvede kv\u00e6rnes groft s\u00e5 giver kernerne brydes i 4 -6 stykker. Jeg brugte en melkv\u00e6rn p\u00e5 Max st\u00f8rrelse.<\/p><p><span style=\"font-size: 16px;font-style: normal;font-weight: 400\">Mens Sojab\u00f8nnerne stadig er varme \u00e6ltes b\u00f8nner og kv\u00e6rnet hvede til en grov og fugtig masse. Den anden halvdel l\u00e6gges over og det hele \u00e6ltes forsigtigt til en homogen masse.<\/p><p>Fadet s\u00e6ttes varmt og fugtigt i 24 timer hvorefter der r\u00f8res i massen.<\/p><p>Efter 36timer skal svampev\u00e6ksten v\u00e6re startet.
