P\u00f8lsen skal have en god fasthed\u00a0 og et godt bid. Den skal v\u00e6re saftighed uden den virker for fed og have en god smag af krydderier og r\u00f8g.<\/p><p>Denne gennemgang er et fors\u00f8g p\u00e5 at beskrive hvordan det kan lykkes at lave en p\u00f8lse der opfylder disse krav.<\/p><p>En p\u00f8lse er typisk sammensat af to slags fars \u2013 en fint hakket bindefars og en mere grovhakket grundfars. <span style=\"font-size: 16px\">\u00a0<\/span><\/p><p>Bindefarsens funktion er at optage v\u00e6ske og fedt og helt <span style=\"font-size: 16px\">klart et meget v\u00e6sentligt skridt p\u00e5 vejen for et godt resultat.<\/span><\/p><p>Stopning af p\u00f8lsen er ogs\u00e5 meget vigtig. Det samlede fedtindhold skal v\u00e6re 15- 25%.<\/p><p>Fedtet skal helst vare af en &#8220;fast&#8221; karakter og jo t\u00e6ttere p\u00e5 grisens nakke desto bedre.<\/p><p>Man kan i princippet k\u00f8be f\u00e6rdig hakket k\u00f8d og bruge det til sine p\u00f8lser, men jeg vil godt have styr p\u00e5 sener og brusk, s\u00e5 bruger altid k\u00f8d jeg selv sk\u00e6re ud.<\/p><p>Nakkekam (ca 15% fedt), svinekam med sv\u00e6rd er nemt at skaffe og ofte p\u00e5 tilbud.<\/p><p>K\u00e6besnitter, bov k\u00f8d er meget velegnede men lidt sv\u00e6re at skaffe.<\/p><p>Sk\u00e6rt oksek\u00f8d, oksebov, kalve culotte er reelt k\u00f8d der er nemt at g\u00e5 til.
